This product uses RFID technology
Working with the Istituto Zooprofilattico (institute for veterinary preventive medicine) in Perugia, we carried out a project for RFID food traceability to attain the PDO label for Norcia prosciutto.
The project traces the pig's lifecycle from birth to slaughter, by implanting a tiny RFID chip in the animal's rear hock. The experiment is based on the robustness of the RFID strong> technology, to check the resistance of the chip to each type of processing that the prosciutto undergoes before it reaches the table. The presence of the chip along the entire production chain ties together all the information acquired during all the various production stages. The adoption of certain procedures and quality standards will be linked to the product to ensure the brand and its quality. The chip allows each individual pig can be identified, with constantly updated about its state of health, information about its DNA, its feeding and its origin.
